doughnuts!


When I was up north last week I bought some GF doughnuts on the recommendation of the local natural foods store owner. They are the Kinnikinnick Maple Glazed doughnuts and they are amazing! They're smaller than regular doughnuts, but they are really, really tasty! Definitely a recommended product.

deby's pizza crust

Jericho turned me on to a gluten free bakery in Denver. I ordered a bunch of stuff and have been trying it slowly. Tonight I made a pizza using their 9" pizza crust. It was fantastic! The crust is somewhere between a thin and hand tossed pizza from Pizz@ Hut and it has phenomenal flavor. It was so tasty I ate half the pizza all on my own. This was the first pizza crust I've found in a long time that's a. not thin crust and b. really yummy.

Macaroni and Cheese

I've been trying really hard since the beginning of the year to eat things that I make, rather than from a box, but the other day I had a HUGE craving for Mac and Cheese, like the blue box kind. So I decided to try out Annie's Rice Pasta & Cheddar.While it satisfied my desires, I thought it was a little lacking in the cheese department. Just like the blue box version you mix the cheese packet with milk and stir in the pasta, but it was kind of runny when made according to the directions. I think next time around I might try it with a little less milk. But, I would definitely recommend it if you want to revisit a piece of yourchildhood!! It satisfied my craving!

Corn Flake Crumbs

I bought corn flake crumbs from the grocery store awhile back, but I finally tried them out the other day. The Corn Flake Crumbs that are distributed by the SoyNut Butter Company are a fantastic substitute for breadcrumbs. I made Rachael Ray's Tilapia Sammies and substituted the corn flake crumbs for the breadcrumbs. They were a little bland and I'll add some additional spices next time, but they were crispy and not at all soggy. They worked perfect. I can't wait to try them with other things.

Seward Cafe

This morning Mark and I met some friends for breakfast at the Seward Cafe in Minneapolis. It's a small little hole in the wall restaurant with fantastic food and they even have some gluten free things on their menu! I had the Lake Street omelet with corn tortillas and a a Vanilla Cupcake. Everything I ate was absolutely wonderful. The cupcake was especially tasty! Who says you can't have cupcakes for breakfast. There were also gluten free pancakes on the menu that I didn't try and some other fun things. I would definitely recommend this restaurant to anyone who wants to try truly healthy and yummy. They also have a variety of vegan options on the menu as well. We'll definitely be going to back to try more things.

Banana Bread

I got this recipe from Fresh and Natural Foods when they had their Gluten Free Days in February. I made this last night and it was fantastic. It was moist and full of flavor straight out of the oven, but what's even better is that it's still that way this morning! I made muffins instead of a loaf of bread so it's easier to grab and go.

Ingredients
1/2 cup (2 sticks) butter
1/2 cup sour cream
3 ripe bananas, mashed (1 1/2 - 2 cups)
2 eggs
2 cups authentic foods multi blend flour
1/2 cup confectioner's sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp authentic foods vanilla powder

Preheat oven to 350 degrees. Butter a 5x9 loaf pan & dust with 1 tsp of authentic foods multi blend flour.

In a separate bowl, combine all of the dry ingredients and set aside.

Add mashed bananas & eggs and mix until thoroughly combined. Scrape down the mixing bowl. Set the mixer on a low speed and add the dry ingredients until combined (do not overmix). Pour batter into prepared loaf pan and bake for 1 hour, or until a toothpick inserted in the middle comes out clean. Turn bread onto a wire rack after baking to cool.

Welcome!!

Recently I've been trying lots of new Gluten Free products. Some of them are good, some bad, but I needed a place to keep track of them so I don't try bad things twice!! I figured I might as well share my experiments with the world. I hope you enjoy what you find here and if you have any recommendations please feel free to share!
